Ingredients

    2 lb 96/4 extra lean ground beef
    1 large bag fresh spinich, or 2 small bags
    1-8 oz. box orzo pasta
    4 quarts Swanson fat free chicken broth
    4 eggs
    1-1/2 C parmeasan cheese
    1 tbs garlic powder
    1 tbs Italian Seasoning
    1/2 tsp salt
    1/2 tsp pepper

Directions

Pour chicken broth into large stock pot and heat to a boil. While broth is heating mix 2 of the eggs, Italian seasoning, garlic powder, 1 cup parmeasan cheese, salt, and pepper in a bowl. Heat a large skillet. Make meat mixture into tiny meatballs and brown well in skillet. When broth comes to a boil reduce to a simmer and add meatballs. Simmer for 20 minutes. Add orzo and simmer for 8 minutes until pasta is done. Chop spinach roughly and stir unto soup until it wilts, and there you have it.
