Number of Servings: 6

Ingredients

    1 tbsp butter (unsalted)
    1/2 cup onion, diced
    1 can pumpkin
    2 cans chicken broth
    1 tbsp thyme
    1/4 tsp white pepper
    1/4 cup reduced fat sour cream
    splash of Marsala wine

Directions

Saute the onions in the butter (can omit butter and saute in water to reduce fat) until translucent.
Add thyme (fresh or dried).
Add chicken broth and pumpkin.
Simmer for 15 - 20 minutes.
Add white pepper.
Serve with a tablespoon of sour cream flavored with Marsala wine.

    Incredible!
    I really enjoyed this pumpkin soup. It's not as thick as what I've eaten at restaurants and I really liked the sour cream with Marsala topping. - 3/18/07
