Ingredients

    1 Butterball Summer Sausage or turkey kielbasa link, sliced
    1 box whole wheat penne pasta
    1 cup water, tap is fine
    2 tbsp instant chicken boullion powder
    1 medium eggplant, peeled and cubed
    1 can diced tomatoes with basil, garlic and oregano
    1 package baby portabello mushrooms, sliced
    1 zucchini, sliced

Directions

Cook Pasta as directed on box. Set Aside

In simmering pot, combine 1 c water boullion and garlic powder and bring to soft boil. Add veggies and turkey sausage and cook until softened. toss in pasta and serve.
