Ingredients

    * Black-eyed peas (cowpeas), immature seeds, cooked, boiled, drained, without salt, 1 Cup (remove)
    * Olive Oil, .5 tbsp (remove)
    * Onions, raw, 2 medium (2-1/2" dia) (remove)
    * Ginger Root, 1 tsp (remove)
    * Garlic, 1 cup (remove)
    * Salt, 1 tsp (remove)
    * *Coriander seed, 1 tsp (remove)
    * *Cumin seed, 1 tsp (remove)
    * Pepper, red or cayenne, .125 tsp (remove)
    * Water, tap, .67 cup (8 fl oz) (remove)
    * Lemon juice, .33 tbsp (remove)

Directions

1. Prep peas.
2. Heat oil. Add onions, fry until golden brown. Add ginger, garlic, cayenne, salt, coriander and cumin and cook for 2-3 minutes.
3. Add water to pan. Cover and simmer until water is evaporated.
4. Add peas. Cook 3-5 minutes. Put lemon juice on top.

    Very Good
    I made this as a side dish with my chicken. The recipe called for to much garlic so I opt to put 2 cloves. I must say it is different but delish... I will make this again yum...
