Introduction

A low calorie but tasty chowder. A low calorie but tasty chowder.
Number of Servings: 6

Ingredients

    6 slices turkey bacon
    2 cups peeled, diced potato
    1 can creamed corn
    1 can whole kernal corn, drained
    1 small onion, diced
    4 cups 1% milk
    1 chicken bouillon cube
    1/2 cup water
    2 tbsp. olive oil
    salt and pepper to taste

Directions

In a large non-stick kettle, saute the turkey bacon in olive oil until crisp. Remove bacon, leave oil/drippings in pan. Crumble bacon and set aside. Cook onion in oil until softened. Add potato, water, and bouillon to the onion, bring to a boil. Reduce heat, cover, and simmer about 15 minutes. WATCH to make sure water doesn't completely evaporate. Once potatoes are cooked, add corn, milk, salt, and pepper. Stir over medium heat until heated throughout. You may add a dash of paprika when you serve. Remove from heat and stir in bacon. Chowder is good right off the stove, but is always better the next day!
