Introduction

One of my favorite sides, I also use this as a main dish for a quick easy high protein meal. One of my favorite sides, I also use this as a main dish for a quick easy high protein meal.
Number of Servings: 8

Ingredients

    1 cup quinoa rinsed
    1 14 oz can low fat/fat free chicken broth or vegetable broth
    1 can black beans rinsed
    3/4 cup fresh spinach chopped
    2 cloves garlic chopped
    1/4 cup sun dried tomatoes chopped (not packed in oil)
    3 green onions chopped (greens also)
    2 Tbs olive oil
    pinch of cayenne pepper
    salt & pepper

Directions

saute onions & garlic in olive oil on Med heat for 1-2 minutes. Add chopped spinach, chopped dried tomatoes and saute till spinach just wilts. Add chicken broth, 1/4 cup water, black beans, quinoa, pinch of cayenne pepper, salt and pepper. Bring to boil and turn the heat down to low and simmer 12-15 minutes until quinoa is fully cooked.

    I actually used frozed spinach a mix that i had of the black beans, onions and tomatoes TASTES good thanks for putting htis on here - 9/1/09
