Ingredients

    Whole Wheat Flour, 4 cup
    Banana, fresh, 6 medium
    Egg, fresh, 4 large
    Baking Soda, 3 tsp
    Oats, 1 cup
    Orange Juice, 1 cup
Blueberries, frozen (unsweetened), 1.5 cup, unthawed
    Flax Seed Meal 3 T
Optional flavors: 1 T each ginger and cinnamon OR orange zest and orange extract, or lemon zest and lemon extract, or vanilla extract.

Directions

Preheat oven to 350. Beat the bananas together with the OJ, add the grain and flax and then beat in the eggs. Sift the flour and baking soda together and stir that in. Add whatever flavors you feel like. Finally, add in the blueberries, stirring gently (if you get too exuberant with the blueberries it turns gray). Pour into a 2 greased (or parchment lined 8x8 pans (I actually use large deep dish pie plates) and bake at 350 for 35 minues and then check (baking time varies depending on how frozen the blueberries are, so check and it may take up to 60 minutes).
