Ingredients

Turmeric, ground, 1/2 tsp
Onions, raw, 1 large chopped
Spinach, fresh, 3 lbs or 24 oz
Pureed Tomatoes, 1/4 cup
Sour cream, fat free, 1/4 cup
paneer (nanak brand), 100 g or about 1/4 of the 400 gram block.
oil, canola, 2 tbsp
corriander, 3 tbsp
corriander powder, 1 tbsp
cumin powder, 1 tbsp
corn flour, 7.5 g
Cumin seed, 1 tsp
salt to taste
OPTIONAL:
1-2 red chilis (leave out If cooking for kids; this dish tastes just fine for adults too without the heat)
Directions
*boil about 3 lbs. of fresh baby spinach until dark green and not crisp; drain and set aside.
*cut about 1/4 of paneer block (3.5oz or 100g) into bite size cubes
*coat cubes in aprox. 1 tbs corn flour
*brown coated cheese cubes in 1 tbs oil; drain on paper towel to remove oil and set aside.
*add remaining tbs of oil to the same pan; add 1 tsp of cumin seeds and allow to start to turn brown and give off fragrance.
*OPTIONAL for "Heat" add dried chili (remove before adding to food processor)
*add chopped onion and saute until golden brown.
*add 1 tbsp of garlic paste
*add 1/2 tbs of ginger paste
*add table spoon of cumin powder
*add tbs of corriander powder
*add 1/4 to 1/2 tsp of turmeric powder
*remove mixture and drain on paper towel to remove as much oil as possible.
*add spinach, onion mixture, 1/4 cup of tomato puree, and about 3 tbs of corriander (also known as cilantro)to food processor and mix into a puree.
*return to pan over low to medium heat and mix in 1/4 cup of fat free sour cream.
*gently mix in fried coated paneer cubes.
