I put these on the table while I finish getting dinner ready and my kids have usually eaten them all before we can even sit down. They get better and better as the minutes tick by. Ingredients

    1 large or 2 small cucumbers -- or 4 baby cucumbers, sold at Costco, or 3 persian cucumbers, sold at Trader Joe's. Just plain cucumbers work fine also.
    2 tbsp rice Vinegar (unsweetened) -- if you ever see "Eden Ume Plum Vinegar," try it! Delicious on these cucumbers, but use less and watch out for the sodium.
    1 tsp toasted sesame oil
    1 tsp black sesame seeds (optional)

Directions

wash and slice cucumbers anyway you like them -- round, sticks, whatever. only the largest toughest cukes will need to be peeled. usually this is good with the peel on.

sprinkle on the vinegar and oil to taste -- generous with the rice vinegar, easy on the sesame oil.

stir well. let sit for a few minutes, stirring occasionally. if it tastes too bland after 5 minutes or so, add a little more vinegar. maybe even a dash of salt.

optionally sprinkle with black sesame seeds, mostly just cuz they look so good.
