Introduction

This is a recipe I found in an old WW book. It is really fast to make and it is delicious. This is a recipe I found in an old WW book. It is really fast to make and it is delicious.
Number of Servings: 4

Ingredients

    1 tbsp unsalted stick margarine
    1 onion chopped
    4 garlic cloves minced
    1 lb medium shrimp peeled and deveined
    (i buy the ez peel raw shrimp frozen when they are on sale)
    1/2 cup minced fresh parsley
    2 tbsp fresh lemon juice
    1/4 tsp ground black pepper
    4 cups hot cooked penne (about 3c uncooked)

Directions

serving equals 1cup of cooked pasta with 1/4 of the shrimp mixture.

1.In a lg nonstick skillet, melt the margarine. Add onion and garlic, cook until softened (3 min)

2.Add shrimp and mushrooms. Cook until shrimp are pink and mushrooms have released all their juices.(6-8 min)

3.Stir in parsley lemon juice and pepper. Serve penne topped with shrimp mixture.
