Introduction

I needed to clean out the fridge, so I blended a couple recipes and came up with this healthy and comforting soup Vegetarian, but could be made vegan by substituting or eliminating the milk. I needed to clean out the fridge, so I blended a couple recipes and came up with this healthy and comforting soup Vegetarian, but could be made vegan by substituting or eliminating the milk.

Ingredients

    2 cans black beans drained and rinsed
    1 can diced tomatoes
    2.5 cups canned pumpkin
    1 cup salsa
    1 cup nonfat evaporated milk
    1 cup onion, chopped
    3 garlic cloves minced
    Pepper, cumin, cayene, chili powder to taste (I never measure, just add until it taste right)

Directions

Heat soup pot and olive oil over med high heat. Add onions and saute for several minutes. Add garlic and saute for 1 min. Add in all other ingredients and bring to a boil. Lower heat and simmer 10 mins.
Makes 7 servings (2 cups/serving)
