Introduction

One of my favorites growing up. One of my favorites growing up.
Number of Servings: 2

Ingredients

    2 Potatoes, small (If using Idaho or Russet, use only one)
    1/2 cup Fat Free Evaporated Milk
    1 pat Unsalted Butter
    1 cup Baby Spinach or regular fresh Spinach

Directions

Peel, cut and boil the potatoes in a metal pot. Add salt to water is desired. Cook Spinach in butter. Transfer wilted Spinach and Fat Free Evaporated Milk to blender. Blend well. Drain potatoes. Return potatoes to metal pot. Add Spinach and Milk blend. With a hand held mixer, whip until creamy. Spices can be added if desired.
