Introduction

So, if you know me you know that I love my veggies, but I have the HARDEST time eating fruit. I don’t know what it is about it. I mean, it’s not like I hate the stuff. There is plenty of fruit out there that I enjoy… I just never eat it.
But today. I was inspired. Here’s what I did.

But today. I was inspired. Here’s what I did.

Number of Servings: 2

Ingredients

    2 chicken breast that have been marinating in lemon pepper stuff.
    ½ cup frozen Mango –cubed
    ½ cup frozen Peaches –sliced
    ½ cup frozen Berry Medley
    2 cups baby mixed greens
    2tbsp dried cranberries & chopped pecans mixed
    2 tbsp Light Zesty Italian Dressing –Tip: I premeasured this out into little bags and just snip a tiny cut in one corner so that it feels as if MUCH more is being used. And you get to cover more with less.

Directions

Grill Chicken. Once done remove and leave sitting so juices redistribute.
Toss on Mango & Peaches on to grill. Yes it’s fine if there are chicken crusties. The fruit will pick them right up and add another layer of flavor!! Once fruit is soften, but still firm –remove.
Thaw mixed berry. Just toss into microwave for 45 second on defrost. Yes they’ll still be a bit chilly, but soft enough while still maintaining their juices & shape. You’ll get a great hot, cool, crunch mouth feel as you eat!
Chop chicken, peaches, & mango to desired size. NOTE: I only used ONE breast. The second one was reserved for lunch the next day.
Toss with greens, cranberries & pecans
Drizzle with dressing.

Makes one GIANT Salad... or if you feel like sharing 2 regular sized salads
