Number of Servings: 6

Ingredients

1 pound dry white bean, I use Northern
    1 medium onion
1/4 pound bacon cut into small pieces
1/4 cup brown sugar (can use splenda)
    1/3 cup molasses
    1 tsp dry mustad
    1 tsp salt
    1/2 tsp pepper

Directions

Soak beans in water overnight. Drain and rinse. Place onion and bacon in 2 quart oven proof casserole (with lid). Mix together sugar, molasses, dry mustard, salt and pepper. pour this over beans and add enough water to barely cover. Bake, covered at 300 degrees for 6 hours. After a couple of hours, stir and check beans. You may have to add a bit of water now and then but don't make them too wet.

This can be done in the crockpot for 8 hours on low. Just go ahead in stir in sugar mixture at the start.

Very good, but I'm going to try adding a jalapeno or hot pepper next time for added flavor. - 4/2/13
