Ingredients

    1 medium onion, chopped
    3 medium potatoes, chopped to bite size pieces
    1 cup frozen kernel corn (thawed)
    2 T olive oil
    2 cups water
    1 cup milk (non-fat)
    salt and pepper to taste
    red pepper flakes (optional)

Directions

Saute onions in olive oil until translucent in a medium saucepan. Add water, potatoes, salt and pepper. Bring to a boil, turn down and simmer for 10 minutes.
Add corn, simmer for an additional 10 minutes until potatoes are soft. Add milk. Correct seasoning, add red pepper flakes if desired. Makes about 6 3/4 cup servings.
