Ingredients

    V small knob of butter (1/2 oz - 12 gms)
    2 cleaned sliced leeks
    2 zucchini (courgettes in Europe) sliced
    I head broccoli chopped
    I cup chicken stock or vegetable stock(8 fl oz)
    24 fluid oz water
    Black pepper

Directions

Melt butter gently in pan, add sliced leeks, cover turn heat low and sweat for 5 mins. Add chopped broccoli and zucchini, cover sweat another 5 mins. Add stock and water (use vegetable stock for vegetarian option), bring to boil, simmer for 15 mins. Blend until smooth. Grinding black pepper. Gently reheat.

    Incredible!
    Delicious! I only added one leek as that was all I had but a lovely warming soup. Almost a creamy taste. Loved it and will make it again. - 1/12/14
