Introduction

I grew up eating bean and bacon soup on a fairly regular basis, but it's not the healthiest soup out there...which is why I was really excited to find a recipe for a crock pot version...I tweaked it a bit and here you have it--a simple semi-healthy soup for those cold frosty days! Number of Servings: 6

Ingredients

    2 c. dried white beans, soaked overnight and drained
    2 large yellow onions, finely chopped
    2 carrots, diced
    5 cloves garlic, minced
    1 c. tomato puree
    5 c. chicken broth
    5 c. water (optional...for thicker soup, omit)
    6 oz. smoked bacon, cooked till light golden & diced
    salt and pepper to taste

Directions

Place beans, onion, carrot, garlic, tomatoe puree, broth, and bacon in large (4qt.+) slow cooker. Cover and cook on low for 8 to 9 hours, till beans are tender. Season with salt and pepper to taste before serving.


*optional ingredients not included in nutritional analysis--if you do add the water, recipe yields 10 servings instead of 6.

    Good
    I used more garlic and only three cups of water and this soup still tasted very very bland to me. And there was so much of it for two people! But, like many soups, it actually tasted better as leftovers on subsequent days. If I make it again, I will experiment with adding bay leaf or other herbs. - 2/1/10
