Introduction

Ingredients

    5 Large Whole Fresh Mushrooms (white)
    3 oz Frozen Chopped Spinach (thawed)
    1/4 cup Onion (chopped finely)
    1 tsp of Soy Sauce
    1/8 cup of Light Ricotta Cheese (can also used cottage cheese)
    1 pinch of Dryed Rosemary Leaves
    1/2 Tsp Chili Powder
    1 tsp Olive Oil
    Salt and Pepper to Taste

Directions

Step 1: Slice Mushrooms vertically, making about 5 slices per mushroom

Step 2: Place olive oil, mushrooms, and chopped onion in a skillet and heat on medium heat. Cook for 5 minutes or until onions start to brown and mushrooms become soft to the touch.

Step 3: Take off heat, and add spinach, ricotta cheese, rosemary, chili powder, and seasonings to the skillet.

Step 4: Replace skillet on heat, mix ingredients in skillet, cover and let cook for 10 minutes on low-medium heat.

Step 5: Take of heat and enjoy!
