Introduction

One of our favorite "Diet" Foods. You can eat two servings and still consume very little calories.
NOTE: to cut sodium, use reduced sodium soy sauce.

Number of Servings: 4

Ingredients

    6 oz. of beef for stir fry, cut in strips
    1/2 cup of fresh or frozen sliced carrots
    2 beef bullion cubes
    1 1/2 cups of water
    3 tbs. reduced sodium soy sauce
    2 cups of fresh or frozen broccoli
    2 tbs. of flour (for thicking sauce)

Directions

Brown meat in very hot non stick pan sprayed with pam. Add carrots, bullion cubes, water and soy sauce. Simmer on med heat until carrots are almost tender. Add Broccoli. Mix flour with cold water to make a paste and add to pot. Bring to boil to thicken sauce, stirring. If needed, add salt to taste. Serve. Makes 4, 1 1/2-cup large servings.

    Good
    6 oz of meat was not enough for 4 serv, added 8oz. This is a good base recipe, but it needs a little more flavor and depth. I added 2 tsp minced ginger, 1 tbsp garlic, and a splash of rice wine vinegar. Also try mixing in 1 tbsp of oyster sauce and only 1 tbsp reduced sodium soy sauce~nice - 11/15/09
