Introduction

This is great when you are craving Chinese food. The calories are not as high as stated as the oil for "frying" isn't all used. You can use stir fry chicken or shrimp equally well and use only 1 Tbsp. of oil for far fewer calories. Enjoy! This is great when you are craving Chinese food. Ingredients

    1/4 cup oil for frying (unless using chicken or shrimp, then just use 1 Tbsp.)
    1/4 cup cornstarch (omit if using chicken or shrimp)
    1 16 oz. package firm tofu, drained and cut into strips
    2 stalks broccoli, chopped into bite size pieces
    1 can waterchestnuts
    1/2 cup teriyaki sauce (I used Trader Joe's Island Soyaki for calories)
    2 packets fresh udon noodles
    2 green onions, sliced

Directions

1. Heat oil in a wok over medium-high heat. Place the 1/4 cup cornstarch in a dish: roll tofu to coat on all sides. Stir-fry in the wok 5 minutes, or until golden brown. Drain tofu on paper towels.
2. Add broccoli to pan and stir fry for several minutes. Add a dash of soysauce while it cooks. Add waterchestnuts and noodles. Continue cooking for about 2 - 3 minutes.
3. Add teriyaki sauce and toss in pan while it cooks. Add tofu, (or chicken or shrimp) and cook just a few minutes until everything is warm.
4. Place on plate and add sliced green onions on top.
