Introduction

Similar to others, but in an easy-to-cook crockpot recipe, and dairy-free! Similar to others, but in an easy-to-cook crockpot recipe, and dairy-free!
Number of Servings: 4

Ingredients

    1 medium butternut squash (1 1/2 lbs)
    1 large onion
    1 can chicken or vegetable broth
    8 oz silken Tofu
    Marjoram
    Cayenne Pepper
    Salt

Directions

Chop squash and onion into 2-inch pieces and place in crockpot. Cover with broth, add spices to taste.
Cook on high 3-4 hours, or low 6-8 hours.
Using immersion blender, puree soup until smooth. Add tofu and puree. Heat 30 more minutes and serve!
