Introduction

Delicious Slow Cooker Vegetarian Chili!! Healthy too! Delicious Slow Cooker Vegetarian Chili!! Healthy too!
Number of Servings: 6

Ingredients

    2 medium onions, coarsely chopped
    3 garlic cloves, minced fine
    ¾ cup finely diced green peppers (see next)

    2 14.5oz cans diced tomatoes, or 1 quart home-canned tomatoes (I use Hunts diced tomatoes w/ pepper, celery & onion in place of diced green peppers)

    3 cans of beans of choice (I like 2 cans pinto 1 can kidney) (about 8.5 cups of beans cooked)
    1 can corn, drained
    8oz can tomato sauce
    ¼ tsp beaumonde spice, optional
    1 tsp ground cumin
    ½ tsp pepper
    1 tsp seasoned salt
    2 TBSP or more chili powder
    1 tsp dried basil

    I don't use the beaumonde spice, some people may like to add a tbsp brown sugar.

    For meat eaters, just add 1lb of browned, ground meat

Directions

Combine all ingredients in slow cooker, cover and cook on low 8-12 hours, or high 5-6 hours.

If you want, saute the onions in veg oil before adding the remaining ingredients.
