Ingredients

    1/2 Cup butter
    4 Cups flour
    3/4 Cup sugar
    2-1/2 tsps. baking powder
    1 tsp. baking soda
    1/8 tsp. salt
    1/4 Cup lukewarm milk
    Grated rind of 1 whole lemon
    2 eggs

Directions

Melt butter without letting it get too hot. Lightly spoon flour into measuring cup; level off with spatula. Combine flour, sugar, baking powder, soda and salt in large bowl. Add melted butter, milk, and lemon rind. Add 1 whole egg. Add second egg white, set aside 1 tsp. of its yolk for brushing on cake; add remainder to bowl. Mix thoroughly, turn out on board and knead several times. Shape dough into long rope, about 2 inches thick. Form into a ring, pinching the ends together; put on buttered and floured heavy baking sheet. Brush with reserved egg yolk. Score with a few shallow diagonal knife cuts. Bake at 375 degrees for 35 minutes. It should nearly double in size. Cool on rack. Wrap and store a day for best flavor....amount of servings depends on how cut...I figured at least 20 servings.
