Introduction

Great when you are having a fix for Mexican food. Great when you are having a fix for Mexican food.
Number of Servings: 6

Ingredients

    8 corn tortillas
    1 lb lean ground turkey
    2 cups salsa
    4 oz fat free cream cheese
    1/4 cup nonfat evaporated milk (or use chicken stock)
    1 cup low fat cheddar cheese
    Black Olives (optional)
    chili powder (optional, if you want more spice)

Directions

Heat over to 350Line pan with 4 tortillas cut up in quarters. Meanwhile brown ground turkey. Add 1 cup salsa, cream cream, and evaporated milk (or chicken stock). Pour on top of corn torillas. Top with remaining corn tortillas cut in quarters. Pour remaining salsa over and top with cheese and black olives(optional). Cover with foil and bake for 30 minutes.
