Ingredients

    2c. black beans (If you use the canned kind, low or no sodium.)
    dash of salt (none if you used low-sodium beans)
    2t vanilla extract
    5T cocoa powder
    3/4c. splenda (or 36 packets)
    6 lg egg whites (6T ground flax is lower by a few cals, but not everyone has that)
    3T canola oil
    1t to 1T baking powder (The less powder the more fudgy, the more powder the more cakey)

Directions

Drain beans reserving some liquid. Mix everything in a blender or food processor. Add liquid as necessary to form a batter.

Put in a sprayed 9X9 pan. Bake at 3:50F 35min. Check on it. If it looks good, EAT IT! If you opted for fudgy brownies, a toothpick inserted in the middle will NOT come out clean. Refrigerate brownies.

Serve warm with milk. They do have a rich powdery dark chocolate taste. More vanilla and less cocoa makes the beans apparent.

    I love basic black bean brownies... these look like the recipe I always used, but a bit more chocolate.. which I always wanted! Can't wait to eat them! Always good with some strawberries and a little plain non fat greek yogurt! - 12/19/10

    I tried a similar recipe using Truvia Baking Blend. I added 2 tbsp of chocolate PB2, ground flax seed, and almond milk (I needed desperately to thin the batter) and that particular batch (I tried one just regular and one with these added ingredients) came out immensely better. - 7/23/14
