Ingredients

Atlantic Salmon Fillets, 6 oz
Barilla whole grain rotini, 14.5 oz
Fat free half and half, 2 cup
Cornstarch, .0416 cup
Salt to taste
Cayenne pepper to taste
Nutmeg, ground, .25 tbsp
Peas, frozen, 1 package (10 oz) (THAWED)
Parmesan Cheese, grated, .50 cup
Walnuts, .25 cup, chopped (optional)
Directions
Heat oven to 450*.
Coat a small baking pan with nonstick cooking spray.
Add salmon to pan and bake for 12 minutes or until fish flakes easily when tested with fork.
Keep warm!
Meanwhile, cook pasta following package directions. Drain and return to pot.
While pasta is cooking, whisk together half-and-half, cornstarch, salt cayenne pepper and nutmeg. Place in medium size saucepan and bring to a boil.
Simmer on low for 1 minute until sauce thickens.
Add peas and simmer for an additional minute, until peas are heated through.
Remove from heat; stir in 1/4 cup of parmesan cheese.
Stir sauce into drained pasta.
Remove skin from salmonand discard.
Flake salmon into bite size pieces and GENTLY stir into pasta.
Add remaining 1/4 cup parmesan cheese, chopped nuts and serve.
