Introduction

My exboyfriend's mother made this delicious lamb stew; it's good with pilaf rice but can really go with just about anything.

I've just guessed at how many servings it makes - I can't remember how many it made last time we made it. It's even better reheated, though it should be reheated on the stove, not in the microwave.

Ingredients

    1.5-1.8 kg lamb
    100g butter
    1.5-2 bulbs of garlic
    4 tsp thyme, dried
    4 tsp parsley, dried
    1 tbsp parsley, fresh or frozen
    2-2.5 tbsp flour, white
    4 dl red wine
    2-3 dl water
    4 tsp salt
    2 ml pepper
    2-3 bay leaves

Directions

Brown the meat in the butter.

Sprinkle the garlic on top (2/3 chopped, 1/3 pressed). Add thyme, dried parsley and flour.

Mix well and add the liquid (water and wine).

Salt, add bay leaves and pepper and let simmer for 1 hour 45 minutes. Add the fresh/frozen parsley when it has about 5 minutes left to cook.
