Introduction

Ingredients

    ~ 1 3/4 cup all-purpose flour
    ~ 1 tsp baking powder
    ~ 1 tsp baking soda
    ~ 1 tsp salt
    ~ 1 tsp ground cinnamon (optional)
    ~ 1/2 tsp ground nutmeg (optional)
    ~ 4 oz light cream cheese, softened (about room temp)
    ~ 1/4 c packed Splenda brown sugar blend
    ~ 1/4 c Splenda granulated
    ~ 3 egg whites (large egg)
    ~ 1 1/2 c mashed overripe bananas (337.5 grams - approx 3 medium bananas)
    ~ 1/2 c unsweetened applesauce
    ~ 1 tsp pure vanilla extract
    ~ 1 Tbsp butter flavoring (McCormick)

Directions

Preheat oven to 350 degrees. Spray a loaf pan with cooking spray.

In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate bowl cream together cream cheese and sugars until well combined. Beat in egg whites. Stir in bananas, applesauce, vanilla, and butter flavoring.

Gradually add dry ingredients to wet and mix until combined. Pour into prepared pan.

Bake in the oven for 55 - 65 minutes, until toothpick inserted into the center comes out clean. Let pan cool on a wire rack for 10 minutes, then turn loaf out of pan and onto rack. Allow to cool for at least 1 hour before slicing. Bread will seem wet if you test with a toothpick.

    How weird, I haven't had mine fall on me yet. I'm sorry it happened to you! The top things I could think of is if the batter was either over-mixed or your oven temp is off. I wish I could give you some better advise - with baking there are too many small factors that could cause falling. Sorry!
