Introduction
This casserole is loosely based on on a Mexican Enchilada recipe I found. It's super easy and although it feels like a cheat with all that flavor it's low cal!! Ingredients

600 grams Chicken Breast (about 3 breasts)
1.5 Cups each yellow, green, red bell peppers in strips
1.5 Cups shredded cabbage
1 540ml Can of Aylmers Accents Spicy Red Pepper Tomatoes
1 215ml Jar Old El Paso Medium Taco Sauce
1/2 Cup Kraft Shredded Mexican Blend Cheese
2 Weight Watchers Whole Wheat Flour Tortillas
Directions
1. Cup chicken into cubes
2. Boil chicken and cabbage until cooked, drain
3. Sautee tomatoes and peppers until hot, drain
4. In a casserole dish layer in tomato and peppers then add chicken and cabbage on top
5. Put in the oven, covered at 350 degrees F for 15 minutes
6. While casserole is in the oven roll tortillas and cut into strips
7. Remove casserole and drain
8. After draining layer in tortilla strips, taco sauce and cheese
9. Put back in the oven uncovered for an additional 5 minutes or until cheese is melted.
Makes 6 Servings - ENJOY!!
