    8 oz low fat plain yogurt
    2 Tbsp dried spearmint
    1 Tbsp honey
    1 medium cucumber, peeled and cubed
    4 italian/ plum tomatoes, peeled, diced
    2 cups fresh spinach, shredded


Mix yogurt, spearmint, honey in small bowl. Set aside.

Salt cucumber and place in sieve and allow to weep/drain while preparing the rest of the vegetable. Toss spinach, tomatoes and dried cucumbers in bowl. Add dressing and toss. Serve immediately.

Makes 4 servings.

  • Delicious and FLEXIBLE recipe. You can alternately use (don't laugh) a mix of Mt. Olive NO SUGAR relish (zero cals) and Great Value Tartar Sauce (60 cals for 2 tbsp) as the dressing, too, and it's still wonderful! - 5/24/18
