Introduction

Ingredients

1 box (2 cups) macaroni noodles
4 oz cheddar cheese
2 oz reduced fat mozzarella cheese (Sargento)
1 cup non fat milk
1/4 cup low-fat half n half
1 small onion sautéed
1 tbsp Smart Balance or margerine
1/3 cup flour
Directions
1. Preheat oven to 350 degrees.
2.Cook macaroni according to package directions.
3. While the macaroni is cooking, Chop and sauté onions in a seperate non-stick pan with cooking spray until browned, set aside.
4. In a medium saucepan melt butter and then add flour. This should make a paste.
5. Add milk and whisk until a white coating is left on the back of a spoon.
6. Once thickened, add the cheese to make a cream sauce.
7. Add browned/sautéed onions.
8. Finally, drain the noodles and add to the sauce.
Pour the noodles and sauce into a baking dish at 350 for about 20 minutes or until top is golden brown.
I use Cabot Extra Sharp Cheddar and mix it with another low-fat cheese for great results.
Makes 6 cup servings.
