Introduction

Ingredients

1lb. Lean Ground Beef
1 cup diced onions
.5 cup diced peppers
2 cloves garlic diced
12 Green Olives, Halved lengthways
1 can Ro Tel Lime & Cilantro Diced Tomatoes
2 tbsp Cumin
2 tbsp Cinnamon
1 tbsp Parsley
Salt & Pepper to taste
1/4 cup Red Wine
1/4 cup water
Directions
1. Brown beef and drain of fat.
2. Add onions, garlic and peppers and cook till soft.
3. Add spices and stir well into mixture.
4. Add the olives.
5. Add the can of diced tomatoes and red wine and simmer. stirring occasionally.
6. Salt and Pepper to taste.
Serve over a bed of rice. White is traditional and seems to be better than brown rice with this dish. I've tried it with both.
Makes 4 - 1cup servings.
