Ingredients
-
1 Lamb Chop
seasonings: Marjoram,grnd. Coriander,allspice (I change these out)
one bunch of asparagus
1 T olive oil
black pepper to taste
garlic powder
Directions
For the meat wipe with damp paper towel. Sprinkle with seasonings (save BP and garlic salt till finished) let sit like a dry rub.
Asparagus rinse well. Pat dry. Set to finish air drying. When ready to eat Heat oven to 370 degrees. Give the asparagus a coating of Olive Oil, not drippy. Place in oven proof pan. (I used loaf pan I am sure a lower sided one would cook quicker.) Give the asparagus a few turns of the Black Pepper. Stick in the hot oven.
Sauté the Lamb chop in a little Olive Oil. Until nicely browned on both sides. Let finish till med-rare. Give it a few turns of black pepper and a sprinkle of garlic powder.
The asparagus will take between 20-30 min. And be not limp at all. When ready to serve give a squeeze of lemon juice.
