    1 cup non fat cottage cheese
    2 cups egg substitute
    1/2 cup cooked/chopped broccoli
    12 large shrimp (I previously marinated in the Chipotle Lime, not necessary, I just needed to calculate)
    1/2 cup part skim Mozzarella cheese
    1T Ricotta Cheese
    1T Shredded Parmesan Cheese
    1T Shredded Asiago Cheese

    Cooking Spray


Preheat oven to 375.

Spray muffin tins with cooking spray.

Mix all ingredients together. Pour into muffin tins. Should make 16. Bake approx. 45 minutes or until center is just set.
