Ingredients

1-1/4 pounds ground turkey
1 cup Quaker Oats quick-cook oatmeal
1/2 cup unsweetened applesauce
1 pound diced tomatoes (seeds removed)
1 medium green bell pepper
1 tbsp Italian seasoning
Directions
Wash the pepper and clean out the seeds. Slice the pepper into 1/8" rings. Set three rings aside and chop the rest. Dice the tomatoes, reserving 1/2 cup. Place the remaining tomatoes, peppers, turkey, oats, applesauce, and Italian seasoning in a bowl and mix carefully but thoroughly (working the meat too much makes the meatloaf too dense). Place the meat mixture into a greased loaf pan, pour the reserved tomatoes over the top, and place the three pepper rings over the lot. Bake at 350 degrees for one hour, or until it reaches an internal temperature of 160 degrees F. Serves six, 4-ounce servings.
