Ingredients

    1 (1/4 oz.) envelope active dry yeast
    2/3 cup water (110 - 115°)
    2-3 cups flour (I do half white, half wheat)
    1 teaspoon kosher salt
    2 teaspoons fresh ground pepper
    2 garlic cloves, minced
    2 tablespoons olive oil (plus more for brushing & kneading)
    1/2 teaspoon sugar

Directions

1.) In a medium bowl, combine the yeast, sugar and water.
2.) Whisk until all the yeast is melted
3.) Let stand for 5 - 10 min.
4.) Add 2 cups flour, salt, pepper, garlic and olive oil.
5.) Stir with your hands until the dough holds together.
6.) Transfer the dough to a lightly oiled surface (use oil not flour as it lends a crunchier crust). Knead until the dough is smooth, about 8 -10 minutes.
7.) Shape into a ball and let stand in an oiled bowl, covered in a warm place for about an hour or until the dough doubles in size.
8.) Punch down the dough and transfer again to a lightly oiled surface.
9.) Divide the dough into equal pieces.
10.) Roll or stretch the dough into about 1/8 inch thick or desired "thinness".
11.) Slide onto cookie sheet and bake at 400° for 10 min., turning halfway through. Or lightly spray and place on grill for 8 min. turning halfway through.
12.) Top with desired topping and continue to bake until cheese is melted.
