Ingredients

    Ground beef, extra lean, 1 LB
    Mama Lupe's, 7-inch Low-Carb Tortilla, 4 serving
    Cream Of Mushroom, Campbells, 98% fat free, 1 Can
    Green Chiles, Fire Roasted, mild, 4 oz Can
    Old El Paso Green Chile Enchilada Sauce, 6 Ounce
    Sargento Reduced Fat 4 Cheese Mexican, 1/2 cup

Directions

Brown ground beef with the chopped onion.

Reserve 4 ounces of Enchilada sauce.

In a large bowl combine the canned ingredients, saving back the reserved sauce.

In a casserole dish, line the bottom with two tortillas.

Layer tortilla, half of the meat, 1/2 of the mixed canned ingredients and one third of the cheese.

Layer the last two tortillas, the rest of the meat, canned mix, cheese and top with the reserved sauce.

Bake at 350 for approx. 15 minutes, until the cheese melts.

Serves 8.
