Found this recipe and used it for some muffins and my sophisticated palated family thought that they were really good. So I thought I would share. I found it at this website.

Ingredients

    1/2 cup flaxseed
    1-1/2 cup water

Directions

Grind flaxseed into a fine powder with a electric coffee grinder. Mix Flaxseed with water in blender for 2 minutes. Chill one hour to set up. Keep refrigerated up to 3 days.
1/4 cup mix => 1 egg
1 cup => 4 eggs
