Introduction

I created this muffin from a standard Morning Glory Muffin. This uses a flaxseed egg substitute for the 3 eggs. I made these for a family get together, and they were a hit! Ingredients

    Dry Ingredients
    2 c pastry flour
    3/4 c ground flaxseed or flaxseed meal
    3/4 c granulated sugar
    3/4 c brown sugar
    2 t ground cinnamon
    3/4 t salt
    1/4 t baking soda
    2-3/4 t baking powder

    Wet Ingredients
    3/4 c flaxseed egg substitute (can find the recipe on Spark People)
    1/2 c crushed pineapple
    1/3 c orange juice, (I used fresh juiced)
    1/4 c extra light olive oil
    2 t vanilla extract

    Other ingredients
    2 c grated carrot
    1/2 c chopped pecans
    1/2 c flaked coconut, unsweet if you can find it
    1/2 c dried cranberries
    1 cup dried apricots, finely chopped.


Directions

Mix dry ingredients in a large bowl. Beat wet ingredients in a smaller bowl. Stir into dry ingredients just until moistened. Fold in other ingredients.
Pour into greased muffins pans, or paper muffin cups, 3/4 full. I used an icecream scoop, filled over full. Bake 350 for 15-18 minutes.
