Ingredients

250 ml (1 c) canned or cooked butter beans, drained and pureed
200 ml (4/5 c) fat-free milk
4 eggs
10 ml (2 t) mustard powder
5 ml (1 t) salt
2 ml (1/2 t) freshly ground black pepper
250 ml (1 c) onion, finely chopped
2 x 170g can tuna in brine, drained
120g low-fat Cheddar cheese, grated
Directions
Preheat the oven to 180C and spray 2 small tart pans (23 cm in diameter) with nonstick spray.
Puree the drained butter beans with 100 ml of the milk.
Pour into a bowl and add the rest of the milk, eggs, mustard powder, salt and pepper, and stir to mix.
Halve the egg and milk mixture and add half the tuna and half the onion to each mixture.
Sprinkle the grated cheese evenly over the 2 tarts.
Place both tarts carefully into the oven and bake for 35 minutes, or until set.
Leave to cool slightly and serve with a tossed salad and low-oil dressing, and 1 slice of low GI Health Bread, if desired. (Bread not included in calculations).
