Introduction
I adapted an old banana loaf recipe that my Mom used to make. I added pumpkin instead of banana, took out a lot of the sugar, substituted half of the flour for bran buds and made an absolutely awesome muffin. Enjoy! Ingredients
-
3/4 cup butter or margarine
2 cups sugar
6 eggs
3 cups pumpkin
2 1/2 cups flour
2 1/2 cups bran buds (put through food processor)
1 Tbsp baking soda
2 tsp baking powder
2 1/4 tsp salt
1 1/2 cup raisins
Directions
Preheat oven to 400 F or 200 C
Put bran buds or other similar cereal through a food processor until ground finely. Measure out 2.5 cups of the buds. Save any remaining buds for your next recipe.
Beat butter, sugar, eggs and pumpkin.
Combine dry ingredients in a separate bowl.
Add raisins and stir well. Add the butter mixture and stir until just mixed. It's ok to have a few lumps. Muffins get very tough if over mixed. Scoop into muffin tins and bake for 18-20 minutes. Makes approx. 36 muffins.
