    2 boiled eggs
    2 tbsp roasted red pepper hummus
    1 Prophet's Pocket Bread half (pita half)
    Handful fresh baby spinach leaves


Mash eggs together with hummus in small dish.
Stuff spinach into pita, then spoon egg salad in.

  • thanks- not sure if my originasl comment got thru (pushed wrong key) A while ago there was a very simple tofu recipe with Italian breadcrumbs. I thought i saved it but no. If you have any idea, I'd appreciate it. Thanks. - 2/20/09
