Introduction
I was out of salsa... the world was sad. I found some stuff in my pantry that seemed like salsa ingredients and made a DELICIOUS salsa! And there was much rejoicing. Ingredients
-
2 cans diced tomatoes
scant 1/2 cup finely minced onion
2 tbsp diced green chilies or fresh finely minced jalapeno
3 cloves garlic, pressed or finely minced
scant 1 tsp lime juice
pinch salt
dash of Tabasco (opt)
1/2 tsp dried cilantro (opt)
Directions
Drain the tomatoes well and set aside.
Roughly chop onion and put in food processor with garlic and jalapeno. Pulse until finely minced. Add in remaining ingredients and pulse to chop tomatoes and combine with other ingredients. Taste and adjust salt/and add cilantro or or seasonings to taste.
Put in a jar and store in fridge. Flavors develop a lot after 1 day, but you can eat it right away.
This makes almost 32oz salsa (equivalent of almost 2 regular size jars).
