This is so rich and hearty, we serve it like a thicker soup, or over some nice brown rice. This is so rich and hearty, we serve it like a thicker soup, or over some nice brown rice.
Number of Servings: 6


    4 boneless skinless chicken breasts (can be frozen)
    1 medium leek sliced
    1 bunch fresh spinach, cut no stems
    1 large diced onion
    2 cloves fresh garlic - diced or pressed
    1 can (14oz) cannelini beans or white northern drained
    1 can (28oz) diced tomatoes, italian style
    1 jar fire roasted red bell peppers - drained
    1 med artichoke heart, cleaned and quartered
    2 TBS extra virgin olive oil - divided
    optional - grated parmesan


Drizzle 1 TBS olive oil in obttom of crock pot. Layer onion and leek, followed by chicken breast, Drizzel other olive oil - season with salt and pepper. Add garlic, beans, artichokes, tomatoes, roasted peppers, and spinach. Cook on low for 6 hours. Sprinkle with cheese before serving.

  • Super easy and tasty. I probably would use cut up chicken as it is quite more soupy than I thought but the flavour was nice. - 2/24/09
