Introduction
A new way to eat your broccoli! A new way to eat your broccoli!Number of Servings: 12
Ingredients

3/4 c whole wheat flour
1 whole egg
1/2 c unsweetened applesauce
1/4 c skim milk
3 cups broccoli florets steamed then coarsly chopped
1/4 cup finely chopped onion
2 cloves garlic chopped
1/4 c grated parmesan cheese
1 tsp habanero hot sauce (or to taste)
Directions
Mix chopped broccoli, onion, garlic and hot sauce together in medium bowl.
Add flour, egg, applesauce, milk and parmesan cheese. Mix together just until combined.
Spray cooking spray in non-stick skillet and heat to medium-high.
Drop batter by rounded tablespoonfuls into hot skillet and spread to about 1/3" thick with back of spoon.
Cook until edges start to dry, then turn and cook other side until done. (lightly browned)
I served this with light bleu cheese dressing, but non-fat sour cream would be equally as good.
