Introduction

Moist low sugar, high protein oatmeal pumpkin pecan cookies. Moist low sugar, high protein oatmeal pumpkin pecan cookies.

Ingredients

    1 small can pumpkin (1.75 cups)
    1/2 cup Splenda Brown Sugar Blend
    2 Eggs
    1 cup whole wheat flour
    1/2 cup cake flour
    1 t. cinnamon
    1 t. baking soda
    1/2 t. cloves
    1/2 t. nutmeg
    dash of salt
    3 cups oats
    1/2 cup pecans
    1/2 cup protein powder
    6 additional Splenda packets if a sweeter cookie is desired

Directions

Blend together wet ingredients, then gradually add dry ingredients adding oats and pecans last

Bake at 350 for 10 minutes

Makes 44 cookies

    Good
    I found that this recipe was easy to make and the cookies tasted good. You should make them sweeter as the recipe suggests if you want your cookies to be sweet. As the recipe is, they are not that sweet. Mine stuck to my cookie sheet even after greasing. I suggest baking them on parchment. - 8/26/15
