Ingredients

6 slices of Whitewheat sandwich bread
3 large eggs
1/2 cup of skim milk
4 tsp. of Splenda
Dash of ground cinnamon
1 tbsp. of vanilla extract
3 very ripe bananas, sliced
1 tsp. brown sugar
2 tsp. margarine
Directions
Spray a 9 by 13 casserole dish with non-stick baking spray.
Arrange the six slices of bread along the bottom of the pan; most of the pan should be covered by the bread.
Beat together the 3 eggs, milk, vanilla, cinnamon and Splenda.
Pour over the bread. After a few moments, flip the slices of bread over to ensure that all the slices are equally covered by the egg-milk mix.
Slice the bananas and sprinkle over the top of the bread. Dot with bits of the margarine.
Bake at 350 degrees for approximately 25 minutes, flipping the slices of bread over once after about 15 minutes. The bread should be lightly browned and puffy, the bananas should be slightly mushy.
Serves two; serve with sugar-free syrup.
