Introduction

The soup is loaded with vegetables. It's more like a stew. I cooked the pasta separately so you can have exactly what you want. (My Hubbie gets more calories than I do.) Ingredients

    10 cups water
    1 large onion, chopped
    2 cloves garlic, minced
    2 TBS. extra virgin olive oil
    1 cup carrots, chopped
    1 cup celery, chopped
    1-28oz./793g can crushed tomatoes
    1-14.5oz./411g can diced tomatoes
    8 oz. zucchini sliced
    2 cups cabbage, chopped
    1/4 cup Kidney beans, fresh
    1/4 cup lima beans, fresh
    1/2 cup great northern beans, fresh
    1 tsp. black pepper
    1 tsp. bay leaf, crushed
    1 tsp. oregano, dried
    1/2 TBS. Basil, dried
    4 oz. spinach, fresh & chopped

Directions

Makes 10 two cup serving.

I do this easy. In large soup pot, pour water and beans and bring to a boil for about 20 minutes.
Chop all your ingredients and dump into pot. Add all your spices and oil. Add both cans of tomatoes. Mix. Turn to medium low and set timer for 30 minutes, mix and reset timer.
I usually make this on laundry day so it cooks all day on low. Boy the house smells soooo good!
Serve with pasta of choice or not. Like I mentioned, it is thick like a stew.

    I really like this recipe. I did make some changes. I used a combination of V8 juice and organic beef broth instead of water. To save time, I used canned beans. Thanks for the great recipe. - 11/18/09
