Number of Servings: 3

Ingredients

    ground turkey, Jennie-O extra lean, 4 oz.
    olive oil, extra virgin, 1 TBSP
    egg beaters, 1 cup, original
    broccoli, 1/2 cup chopped
    carrots, 1/2 cup chopped
    cheese sticks, mozzarella light, 2
    garlic salt or other seasoning (optional)

Directions

Brown turkey in olive oil in medium skillet.

Add garlic salt or other seasonings if desired.

While that's cooking, add a little water to vegetables and microwave until tender (2-3 minutes).

In small mixing bowl, combine egg beaters, veggies, cheese sticks (chopped or sliced), and turkey (after it's cooked).

Mix all ingredients and return to skillet. (There should be a little olive oil left in skillet-- if it's not enough to keep eggs from sticking, add your favorite no-cal cooking spray.)

Scramble over low-to-medium heat until desired firmness is reached.
