Ingredients

    1/2 C sugar
    1/2 C Canola Oil
    2 eggs -- I use 1/2 cup Egg Beaters
    1 t vanilla
    1 C flour
    1 C 1 Minute Oats
    1/2 t Baking Powder
    1/2 t Baking Soda
    1/2 t salt
    3/4 cup minimchocolate chips
    1/3 cup walnut pieces

Directions

Combine wet ingredients and stir together
Combine dry ingredients
Add dry to wet ingredients
Stir in chocolate chips and walnuts
Drop by well rounded tbsp. onto silpat or parchment lined cookie sheet
Makes 21 breakfast treats.

    Where's the pumpkin?! Maybe size? I have no oatmeal, so I used wheat meal (wheat bran). I use brown rice flour instead of wheat flour & double my soda and powder. I have no walnuts so used sesame seeds. Funny taste. A scoop of peanut butter added to the batter fixed it! 350 F for 11 minutes. - 2/23/11
